Inside-Out Cheeseburger Recipe!

Mmmmmmm......I can almost taste the cheesiness of this burger! The recipe is from www.EatingWell.com

ACTIVE TIME: 20 minutes

TOTAL TIME: 35 minutes

EASE OF PREPARATION: Easy

1/4 cup shredded Cheddar cheese
1/4 cup shredded Gruyere cheese
1 pound 90%-lean ground beef
1 tablespoon Worcestershire sauce
1 1/2 teaspoons paprika
1/4 teaspoon freshly ground pepper

1. Preheat grill to medium-high or preheat the broiler.
2. Combine Cheddar and Gruyere in a small bowl.
3. Gently mix beef, Worcestershire, paprika and pepper in a large bowl, preferably with your hands, without overworking. Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover each with one of the remaining patties. Crimp and seal the edges closed.
4. To grill: Lightly oil the grill rack (see Tip). Grill the stuffed patties over medium-high heat, about 4 minutes per side for medium-well. (Be sure not to press the burgers as they cook or they’ll split open and the cheese will ooze out.) To broil: Cover a broiler pan with foil and coat with cooking spray. Broil the stuffed patties in the upper third of the oven, about 4 minutes per side for medium-well. In either case, let the burgers stand for 5 minutes before serving.

NUTRITION INFORMATION: Per serving: 250 calories; 16 g fat (7 g sat, 6 g mono); 74 mg cholesterol; 1 g carbohydrate; 24 g protein; 0 g fiber; 164 mg sodium.

In a small shallow bowl, combine the cereal and brown sugar. Spread cut sides of apples with peanut butter; roll in cereal mixture. Serve immediately. Yield: 4 servings.

A Mexican-style torta is just like a burrito, except the “wrapper” is a hollowed-out roll instead of a tortilla. Here it’s filled with mashed spiced black beans and a quick guacamole. Take this vegetarian version to another level (and add calcium) by melting Monterey Jack cheese onto the bean side of the sandwich. Serve with: Grilled corn on the cob or Spanish rice.

Makes 4 servings

ACTIVE TIME: 25 minutes

TOTAL TIME: 25 minutes

EASE OF PREPARATION: Easy

1 15-ounce can black beans or pinto beans, rinsed (see Note)
3 tablespoons prepared salsa
1 tablespoon chopped pickled jalapeño
1/2 teaspoon ground cumin
1 ripe avocado, pitted
2 tablespoons minced onion
1 tablespoon lime juice
1 16- to 20-inch-long baguette, preferably whole-grain
1 1/3 cups shredded green cabbage

1. Mash beans, salsa, jalapeño and cumin in a small bowl. Mash avocado, onion and lime juice in another small bowl.
2. Cut baguette into 4 equal lengths. Split each piece in half horizontally. Pull out most of the soft bread from the center so you’re left with mostly crust. Divide the bean paste, avocado mixture and cabbage evenly among the sandwiches. Cut each in half and serve.

Kids Bruschetta Recipe From Family Fun

Looking for something quick, easy, and healthy to make for the kids? Try this bruschetta recipe from Disney Family Fun!

RECIPE INGREDIENTS:
1 large ready-to-eat pizza shell or long French bread
2 cups shredded American cheese
1 large tomato, chopped
1/2 tsp. dried oregano or Italian seasoning, crushed
1. Preheat oven to 375 degrees. If using bread, cut in half lengthwise. Place on cookie sheet and bake 8 to 10 minutes, or until lightly toasted.

2. Combine cheese, tomato and oregano and place the mixture on top of the pizza shell or halved bread. Bake 5 minutes, or until cheese is melted. Cut into slices and serve immediately. Makes 4 to 6 servings.

Homemade Milk Shake With No Ice Cream!

I found this recipe on www.hillbillyhousewife.com! It actually tastes like a Wendy's Frosty, but it uses no ice cream! I'd strongly advise you guys to check out the website, because there are a ton of great ideas for budget-minded families. Also, if you want an explanation on why it's necessary to add the oil, you can read more about it here. Anyway, here is the recipe:

1-1/2 to 2 cups ice water
1-1/2 cups nonfat dry milk powder
2/3 cup sugar
1/4 cup unsweetened cocoa
1 teaspoon vanilla
1 to 1-1/2 trays of ice cubes, as much as you can spare
2 tablespoons corn oil plus a 5-second squirt of non-stick spray for emulsification purposes

Place all of the ingredients into the blender, including the oil and the non-stick spray. Use less water for thicker milk shakes and more water for shakes that are easy on your blender motor. The blender should be about 3/4’s full. Place the lid on. Process for a full 2 minutes. Pour into cups and serve. Makes 4 - 12oz servings.

Variations:

Add 1 tablespoon of instant coffee for a mocha shake
Add 1 very ripe banana for a chocolate banana shake
Add a big spoonful of peanut butter for a decadent Chocolate Peanut Butter Shake.
Add a few broken red and white candy mints for a refreshing Chocolate Mint shake.
To make Vanilla Milk Shakes, omit the cocoa powder, reduce the sugar to 1/2-cup and add 1 tablespoon (yes a full tablespoon) of vanilla flavoring. For a french vanilla milk shake crack in an egg too.

Kiwi-Lime Ice Pops...Yummy!

I found this recipe on the Eating Well website and let me say they are dee-liii-ciousss!! Plus, you control how much sugar to add! A great healthy treat for you and your kids!

1 1/3 cups water
2/3 cup sugar
1 teaspoon finely freshly grated lime zest
1 teaspoon grated fresh ginger
1/3 cup lime juice
1 drop green food coloring (optional)
2 kiwis, peeled and very thinly sliced

1. Pour water into a small saucepan, add sugar, lime zest and ginger. Stir over high heat until the sugar dissolves and the mixture comes to a boil. Remove from the heat and let cool to room temperature.
2. Strain the syrup through a fine sieve set over a bowl. Stir in lime juice and food coloring, if using.
3. Line 8 individual frozen-treat molds or small (2-ounce) paper cups with slices of kiwi, pressing them onto the sides so they are close together but not overlapping. Fill each mold or cup with the lime mixture.
4. Freeze until beginning to set, about 1 hour. Insert frozen-treat sticks and freeze until completely firm. Dip the molds briefly in hot water before unmolding.

NUTRITION INFORMATION: Per serving: 79 calories; 0 g fat (0 g sat, 0 g mono); 0 mg cholesterol; 20 g carbohydrate; 0 g protein; 1 g fiber; 2 mg sodium; 73 mg potassium.
